Ingredients and substitutions for Marry Me Chicken

  1. Chicken – I like to use boneless skinless chicken breasts for this recipe, but you could also use chicken thighs (with or without the bone)
  2. Sun-Dried Tomatoes – These add so much flavor to the sauce! If you can’t find sun dried tomatoes, you could also use fresh tomatoes, cherry tomatoes, roasted bell pepper, tomato paste, or tomato puree instead.
  3. Garlic – Fresh garlic is best, but you could also use garlic powder.
  4. Parmesan Cheese – This adds a nice depth of flavor to the sauce. Try to use freshly grated for the best flavor.
  5. Heavy Cream – This is what makes the sauce nice and creamy. You could also use half and half or milk, but the sauce will be thinner.
  6. Chicken broth – If you don’t have chicken broth, you could also use water, chicken stock, or veggie stock/ vegetable stock.
  7. Dried Basil – This is optional, but I love the flavor it adds to the sauce.
  8. Oregano – Goes really well with the sun-dried tomatoes.
  9. Salt and Pepper – To taste
  10. Red pepper flakes – Gives this dish a dash of heat. I like a little bit of heat in my sauce!
  11. Oil – I prefer avocado oil but you can use olive oil or any other oil you have

Cooking tips for Marry me chicken (Creamy Sun-Dried Tomato Chicken)

  1. Parmesan Cheese – Make sure your cheese is at room temperature so it melts easily into the sauce. Cold cheese will make the sauce lumpy.
  2. For a thicker sauce add all purpose flour, cornstarch, or cream cheese
  3. Add vegetables – This dish is great with some sautéed spinach or mushrooms.
  4. If you want a bit more of a kick, add some cayenne pepper, chili flakes, or more crushed red pepper flakes to the sauce.
  5. Use half and half to make this dish lower in fat
  6. Add a splash of white wine for more flavor (sauvignon blanc)
  7. Use a large cast iron skillet or large oven-safe skillet – this recipe needs to also be baked. Using a cast iron will allow you to transfer from the stovetop to the oven.
