Easy Spicy “Vodka” Pasta Recipe Without Vodka

  • 16 ounce rigatoni or any other pasta 
  • 1/2 cup Avocado oil 
  • 2 shallots minced
  • 1 tablespoon fresh garlic minced
  • 2/3 cup tomato sauce
  • 1 1/3 cup heavy cream
  • 2 teaspoons Crushed red pepper flakes 
  • Salt and pepper to taste
  • 1/2 cup grated parmesan 
  • 2 tablespoons butter
  • pasta water
  • Fresh parsley or basil 

Instructions

  1. Bowl pasta in a large pot with salt – save a cup of pasta water
  2. In a large skillet or saucepan, add butter or avocado oil over medium-low heat. Add the garlic and shallot
  3. Saute the shallots for a few minutes until translucent then add the minced garlic and saute for 1-2 minutes
  4. Add tomato paste and cook for about 4 to 5 minutes to caramelize on medium-high heat
  5. Add heavy cream and mix until you have a creamy consistency
  6. Add the red pepper flakes, grated parmesan, pasta water, pinch of kosher salt, and black pepper to taste.
  7. Mix until smooth.
  8. If you think it needs more pasta water feel free to add more for a smooth sauce consistency
  9. Toss in the cooked pasta and mix to coat evenly.
  10. Top it off with grated parm and fresh parsley.
