Easy Spicy “Vodka” Pasta Recipe Without Vodka
- 16 ounce rigatoni or any other pasta
- 1/2 cup Avocado oil
- 2 shallots minced
- 1 tablespoon fresh garlic minced
- 2/3 cup tomato sauce
- 1 1/3 cup heavy cream
- 2 teaspoons Crushed red pepper flakes
- Salt and pepper to taste
- 1/2 cup grated parmesan
- 2 tablespoons butter
- pasta water
- Fresh parsley or basil
- Bowl pasta in a large pot with salt – save a cup of pasta water
- In a large skillet or saucepan, add butter or avocado oil over medium-low heat. Add the garlic and shallot
- Saute the shallots for a few minutes until translucent then add the minced garlic and saute for 1-2 minutes
- Add tomato paste and cook for about 4 to 5 minutes to caramelize on medium-high heat
- Add heavy cream and mix until you have a creamy consistency
- Add the red pepper flakes, grated parmesan, pasta water, pinch of kosher salt, and black pepper to taste.
- Mix until smooth.
- If you think it needs more pasta water feel free to add more for a smooth sauce consistency
- Toss in the cooked pasta and mix to coat evenly.
- Top it off with grated parm and fresh parsley.
