Ingredients for golden beet soup

  • Yellow onion or shallots
  • Garlic cloves
  • Extra virgin olive oil or butter

How to make golden beet soup

  1. Preheat oven to 400 degrees F.
  2. Wash the beets and place on a lined sheet pan. Season with olive oil, salt, and pepper. Roast for 50 mins until soft. Let cool then dice.
  3. Then, peel and chop a large onion or shallots and garlic cloves. 
  4. Heat the olive oil in a large stock pot over medium heat. Sauté  the onions until translucent.
  5. Add in garlic, thyme, smoked paprika, red pepper flakes, cumin, salt and pepper. (bay leaf optional)
  6. Add in the beets and Pour in the chicken or vegetable broth. Bring the soup to a boil – simmer on low-medium heat cook for 10-20 mins 
  7. After the soup has simmered, use an immersion blender (or regular blender) to blend the soup until nice and smooth
  8. After the soup is blended, stir in the heavy cream or coconut cream if are choosing to make this soup creamier.
  9. Season with additional pinch of salt and pepper to taste.
  10. Serve hot with a swirl of heavy cream and enjoy!
