Pollo Asado Street Tacos

  • 23 pounds boneless skinless chicken breast
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • Kosher salt
  • Black pepper
  • 1/2 cup orange juice (1 large orange )
  • 1/4 cup lime juice (1 large lime)
  • 1 tablespoon sazon
  • 1 tablespoon achiote powder
  • 3 cloves garlic minced

Instructions

  1. Clean the chicken and place it in a large bowl or Ziploc bag.
  2. Marinade ingredients: Add all the ingredients and combine well onto the boneless chicken breast or chicken thighs and let marinate for at least 2-3 hours or overnight for best results.
  3. Grill the chicken. Heat your gas grill or charcoal grill up and cook the chicken with medium-high heat for about 5 minutes per side or until fully cooked.
  4. If you don’t have a grill you can also cook on the stove top or bake in the oven on a baking sheet.
  5. Warm corn tortillas, cut your chicken into bite-sized pieces, and assemble your tacos with your favorite toppings.
