Golden Beet Soup Recipe(Healthy and Delicious!)

- 3–4 medium Golden beets, peeled
- 1 Yellow onion or shallots
- 3 Garlic cloves, minced
- Extra virgin olive oil or butter
- 2 Carrots peeled
- Kosher salt
- Black pepper
- 4 cups Broth (chicken broth, vegetable both, vegetable stock etc.)
- 1/2 cup Heavy cream or coconut milk (coconut cream)
- 1/2 tsp Smoked Paprika
- 1/2 tsp cumin
- 1/2 tsp dried thyme
- Pinch of Red pepper flakes
- 1 Bay leaf (optional)
- Preheat oven to 400 degrees F.
- Wash the beets and place on a lined sheet pan. Season with olive oil, salt, and pepper. Roast for 50 mins until soft. Let cool then dice.
- Then, peel and chop a large onion or shallots and garlic cloves.
- Heat the olive oil in a large stock pot over medium heat. Sauté the onions until translucent.
- Add in garlic, thyme, smoked paprika, red pepper flakes, cumin, salt and pepper. (bay leaf optional)
- Add in the beets and Pour in the chicken or vegetable broth. Bring the soup to a boil – simmer on low-medium heat cook for 10-20 mins
- After the soup has simmered, use an immersion blender (or regular blender) to blend the soup until nice and smooth
- After the soup is blended, stir in the heavy cream or coconut cream if are choosing to make this soup creamier.
- Season with additional pinch of salt and pepper to taste.
- Serve hot with a swirl of heavy cream and enjoy!
