Cheesecake Factory Kale Salad

- 1/2 cup uncooked quinoa
- 6 cups chopped kale
- 2 apples cored and chopped
- 1 cup seedless grapes, halved
- 1/2 cup diced bell pepper
- 1/4 cup pepitas
For the dressing:
- Olive oil
- Lemon juice
- Garlic
- Honey
- Dijon Mustard
- Parmigiano Reggiano
- Salt and pepper
- Start by cooking the quinoa according to the package directions. Once it’s cooked, let it cool for a few minutes.
- Meanwhile, wash the kale and chop it into bite-sized pieces.
- Place the kale in a large bowl and massage it with your hands for a minute or two to soften it up.
- In a small jar or container, shake together all of the dressing ingredients until they’re well combined.
- Place the kale in a large salad bowl and pour some dressing over it and toss. Let sit for 10 minutes to soften
- Next, add the cooked quinoa, diced apples, grapes, bell pepper, and pepitas to the bowl.
- Pour the rest of the dressing over the salad and mix everything together until coated.
- Serve immediately or store in the fridge for later. Enjoy!
