Cheesecake Factory Kale Salad


  • 1/2 cup uncooked quinoa
  • 6 cups chopped kale
  • 2 apples cored and chopped
  • 1 cup seedless grapes, halved
  • 1/2 cup diced bell pepper
  • 1/4 cup pepitas

For the dressing:

  • Olive oil
  • Lemon juice
  • Garlic
  • Honey
  • Dijon Mustard
  • Parmigiano Reggiano
  • Salt and pepper


  1. Start by cooking the quinoa according to the package directions. Once it’s cooked, let it cool for a few minutes.
  2. Meanwhile, wash the kale and chop it into bite-sized pieces.
  3. Place the kale in a large bowl and massage it with your hands for a minute or two to soften it up.
  4. In a small jar or container, shake together all of the dressing ingredients until they’re well combined.
  5. Place the kale in a large salad bowl and pour some dressing over it and toss. Let sit for 10 minutes to soften
  6. Next, add the cooked quinoa, diced apples, grapes, bell pepper, and pepitas to the bowl.
  7. Pour the rest of the dressing over the salad and mix everything together until coated.
  8. Serve immediately or store in the fridge for later. Enjoy!
