Shakshuka Recipe for One

Shakshuka is a traditional North African dish that consists of eggs cooked in a tomato sauce. This dish is perfect for a quick and healthy meal that's ready in 30 mins!

Ingredients
  

  • 1/2 can diced tomatoes
  • 1 cup onions chopped
  • 1 cup red bell pepper chopped
  • 2 eggs
  • 1 garlic clove
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • black pepper
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper optional
  • 1/4 tsp cumin
  • 1/4 tsp chili powder
  • parsley garnish
  • cilantro garnish

Instructions
 

  • Heat olive oil in a small or large skillet over medium heat. Add in chopped onions and red peppers and cook until softened, about five minutes.
  • Next, add in garlic, paprika, cumin, chili powder, and a pinch of salt and pepper. Stir and cook for an additional minute on medium-high heat
  • Pour in your canned tomatoes into the pan (if using fresh whole tomatoes, add them now). Use a spoon to break up the tomatoes. Bring the mixture to a simmer and cook for five minutes. Taste and add more salt and pepper if needed
  • Use a spoon to make little wells/indentations in the tomato sauce. Crack an egg into each one.
  • Cover the pan with a lid and cook until the eggs are firm, about five minutes or to your liking. (or bake in oven)
  • Garnish with fresh cilantro and parsley and serve immediately. Enjoy!
