Chili Lime Chicken and Rice

Ingredients
  

  • 4-6 boneless skinless chicken breasts
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3 tsp chili powder
  • 3 tsp chili lime powder
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 tsp salt and pepper to taste
  • 1 lime juice
  • 2 1/4 cup chicken broth
  • 1 cup rice
  • cilantro or parsley for garnish
  • limes for garnish

Instructions
 

  • Season your chicken breasts: season with chili lime seasoning, garlic powder, onion powder, chili powder, smoked paprika, cayenne pepper, salt and pepper.
  • Heat up pan/skillet: Melt some butter or olive oil in a pan set to medium heat and cook the seasoned chicken until cooked thoroughly.
  • Remove the chicken: set it aside on a plate
  • Add in the rice: Leave in the let over seasoning from cooking the chicken. Add in a bit more of the above seasonings for extra flavor.
  • Pour in chicken broth and lime juice: Stir
  • Add chicken back: Place cooked chicken on top of the rice and broth.
  • Cover and cook until water is gone and rice is done.
  • Serve: Top with sliced limes, a squeeze of lime juice, and fresh cilantro or parsley
