Ingredients for Chili Lime Chicken and rice recipe
- Boneless skinless chicken breasts
- Olive oil, vegetable oil, or butter
- Chili powder
- Chili lime seasoning (ok if you don’t have)
- Garlic powder
- Onion powder
- Smoked paprika
- Cayenne pepper
- Kosher salt and black pepper to taste
- Chicken broth or chicken stock
- Limes
- Fresh parsley or cilantro for topping
- White rice: jasmine or long grain will work
How to make chili lime chicken and rice
- Season your chicken breasts: season with chili lime seasoning, garlic powder, onion powder, chili powder, smoked paprika, cayenne pepper, salt and pepper.
- Heat up pan/skillet: Melt some butter or olive oil in a pan set to medium heat and cook the seasoned chicken until cooked thoroughly.
- Remove the chicken: set it aside on a plate
- Add in the rice: Leave in the let over seasoning from cooking the chicken. Add in a bit more of the above seasonings for extra flavor.
- Pour in chicken broth and lime juice: Stir
- Add chicken back: Place cooked chicken on top of the rice and broth.
- Cover and cook until water is gone and rice is done.
- Serve: Top with sliced limes, a squeeze of lime juice, and fresh cilantro
